An iSi dispenser is not a batch-cooking machine — it is a meal-prep enhancer. It excels at turning smooth, strainable bases into foams, whipped toppings, and airy sauces that upgrade repetitive meals. Use it for finishing components across multiple meals, not as a primary cooking tool.
Smooth, pourable, and strained — always
Every iSi base must be fully blended, fully dissolved, and strained through a fine mesh sieve before filling. This is the single most important rule. Chunky or fibrous mixtures clog the valve and tip.
Body holds the bubbles
Thin liquids without structure — plain broth, juice, watery purées — collapse immediately. Fat (cream, coconut milk), protein (dairy, egg yolk), starch, or gelatin gives the foam enough structure to hold its shape.
Do not overfill
The empty headspace above the fill line is required for proper pressurization and dispensing. Overfilling results in weak pressure, poor foam quality, and potential seal issues. Respect the fill line every time.
This is a finishing tool, not a primary cooker
The dispenser works best as a topping, garnish, plated sauce, or airy accompaniment. For true meal-prep bulk work — cooking proteins, grains, or beans — use the oven, pressure cooker, or stovetop instead.
One base, multiple meals
The best meal-prep use is a component that works across several different meals — herbed yogurt foam on roasted vegetables, grain bowls, and wraps; parmesan cream on pasta, beans, and broccoli. Maximize reuse.
Know these before building your workflow around it.
Chunky foods — salsa, chopped vegetables, shredded meat, mashed potatoes with bits, and soups with whole beans or noodles clog the valve and tip consistently.
Highly fibrous foods — celery-heavy purées, pineapple fiber, leafy greens, and coconut shreds dispense poorly even when blended unless very aggressively strained.
Very thin liquids without stabilizers — plain broth, juice, thin vinaigrettes, and watery purées collapse as weak froth or nothing at all. Fat, protein, or starch is required.
Large-batch staple cooking — trays of protein, big pots of beans, bulk grains, and roasted vegetables all belong to the oven, pressure cooker, and stovetop, not this tool.
Long-storage dairy prep — highly perishable dairy-based preparations degrade quickly. The realistic horizon is 2–4 days for most cream-based toppings.
